Preheat the oven to 425°F (220°C).

Roll out one pie crust and place it in a pie dish.

Peel, core, and slice the apples.

In a large bowl, mix together the sugar, flour, cinnamon, and nutmeg.

Add the sliced apples to the bowl and toss to coat them in the sugar mixture.

Pour the apple mixture into the pie crust.

Dot the top of the apples with small pieces of butter.

Roll out the second pie crust and place it over the apples.

Trim and crimp the edges of the pie crust to seal the pie.

Cut slits in the top crust to allow steam to escape.

Beat the egg in a small bowl and brush it over the top crust.

Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown.
