  1. Preheat the oven to 375°F (190°C). Grease a muffin pan.
  2. In a large bowl, combine the flour, baking powder, cinnamon, and salt.
  3. In another bowl, beat the eggs and sugar until well combined. Add the vegetable oil, milk, and vanilla extract. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the diced apples and chopped walnuts.
  6. Spoon the batter into the prepared muffin pan, filling each cup about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove from the oven and let the muffins cool in the pan for 10 minutes. Then transfer them to a wire rack to cool completely.
  9. Serve and enjoy!
