  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 1/2 cup Unsalted butter
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
  • 1 Egg
  • 1/2 teaspoon Vanilla extract
  • 1 1/2 cup Granny Smith apples
  • 1 teaspoon Lemon juice
  • 1 tablespoon Cornstarch
  • 1/2 cup Rolled oats
  • 1/4 cup Chopped walnuts
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, granulated sugar, brown sugar, butter, baking powder, cinnamon, and salt until crumbly.
  3. In a separate bowl, whisk together the egg and vanilla extract.
  4. Peel and dice the apples, then toss them with lemon juice and cornstarch.
  5. Add the egg mixture to the flour mixture and mix until just combined.
  6. Fold in the diced apples.
  7. In a small bowl, combine the rolled oats and chopped walnuts.
  8. Take small portions of the dough and roll them into balls.
  9. Roll each ball in the oat-walnut mixture to coat.
  10. Place the coated balls onto a baking sheet lined with parchment paper.
  11. Bake for 20-25 minutes, or until golden brown.
  12. Allow the cookies to cool for 10 minutes before serving.
