  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the apples, cranberries, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, lemon juice, and vanilla extract. Mix well.
  3. Roll out the pie crust and place it in a pie dish.
  4. Pour the apple cranberry mixture into the pie crust.
  5. Dot the top of the filling with small pieces of unsalted butter.
  6. Roll out the second pie crust and place it on top of the filling. Seal the edges and make slits on the top crust for venting.
  7. Brush the top crust with beaten egg for a golden finish.
  8. Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  9. Remove from the oven and let it rest for at least 2 hours before serving.
  10. Serve warm or at room temperature.
