  1. In a bowl, mix together the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, tossing with a fork until the dough forms a ball.
  2. Divide the dough in half, and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Peel, core, and thinly slice the apples. In a bowl, toss the apple slices with lemon juice, sugar, and cinnamon.
  5. On a lightly floured surface, roll out one disk of dough to 1/8-inch (3mm) thickness. Cut out circles using a round cookie cutter or a glass.
  6. Place a small amount of grated cheddar cheese in the center of each dough circle. Top with a few apple slices. Brush the edges of the dough with beaten egg.
  7. Fold the dough over the filling to form a half-moon shape. Press the edges to seal and crimp with a fork.
  8. Place the mini hand pies on the prepared baking sheet. Brush the tops with beaten egg.
  9. Bake for 20-25 minutes, or until golden brown.
