  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat the eggs, granulated sugar, oil, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots and apples.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
  9. In a mixing bowl, beat the cream cheese and butter until smooth.
  10. Gradually add the powdered sugar and continue beating until well combined.
  11. Place one cake layer on a serving plate and spread a layer of cream cheese filling on top.
  12. Place the second cake layer on top and frost the entire cake with the remaining cream cheese filling.
  13. Sprinkle the chopped praline pecans on top.
  14. Let the cake rest for at least 1 hour before serving.
