  1. Preheat the oven to 180°C (350°F).
  2. Peel and core the apples, then cut them into small cubes.
  3. In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  4. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  6. Fold in the apple cubes.
  7. Grease a muffin tin or line it with cupcake liners.
  8. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the apple cakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
