  2. Peel and core the apples, then cut them into small chunks.
  3. Cut the rhubarb into small pieces.

  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract.
  7. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
