Ingredients
  • 125 gram Butter
  • 2 teaspoon Golden syrup
  • 1.5 teaspoon Baking soda
  • 2 teaspoon Boiling water
  • 150 gram Rolled oats
  • 90 gram Desiccated coconut
  • 150 gram All-purpose flour
  • 100 gram Brown sugar
Instructions
  1. Preheat the oven to 160°C (320°F) and line a baking tray with parchment paper.
  2. In a small saucepan, melt the butter and golden syrup over low heat.
  3. In a separate small bowl, dissolve the baking soda in boiling water.
  4. In a large mixing bowl, combine the rolled oats, desiccated coconut, all-purpose flour, and brown sugar.
  5. Pour the melted butter mixture and the dissolved baking soda into the dry ingredients. Mix until well combined.
  6. Roll tablespoonfuls of the mixture into balls and place them onto the prepared baking tray, leaving space between each biscuit.
  7. Flatten each ball slightly with the back of a spoon.
  8. Bake for 10-12 minutes or until golden brown.
  9. Allow the biscuits to cool on the baking tray for 5 minutes, then transfer them to a wire rack to cool completely.
