Preheat the oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.

Add the chicken and cook until browned.

Stir in the flour and cook for 1 minute.

Gradually whisk in the chicken broth and milk. Cook until thickened.

Stir in the carrots, peas, salt, black pepper, and thyme.

Remove from heat and let cool slightly.

Roll out the pie crust and line a pie dish.

Pour the chicken mixture into the pie crust.

Roll out the remaining pie crust and place it on top of the filling.

Trim and crimp the edges.

Cut slits in the top crust to allow steam to escape.

Beat the egg and brush it over the top crust.

Bake for 45-50 minutes, or until the crust is golden brown.

Let the pie rest for 10 minutes before serving.
