Ingredients
  • 2 cup Sweet potatoes
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the mashed sweet potatoes and milk.
  7. Pour the batter into a greased and floured cake pan.
  8. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
