  2. In a large bowl, cream together the butter and caster sugar until light and fluffy.
  3. Beat in the eggs, one at a time, adding a spoonful of flour with each egg to prevent curdling.
  4. Dissolve the instant coffee granules in boiling water and add to the mixture, stirring well.
  5. Fold in the self-raising flour and chopped walnuts.
  6. Pour the batter into the prepared cake tin and smooth the top.
  7. Bake in the preheated oven for 35-40 minutes or until a skewer inserted into the center comes out clean.
  8. Remove from the oven and let it cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  9. In a separate bowl, whip the double cream and icing sugar until stiff peaks form.
  10. Spread the whipped cream over the cooled cake and garnish with coffee beans.
