  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the almond extract.
  4. Gradually mix in the dry ingredients, alternating with the milk. Divide the batter evenly into six bowls.
  5. Add a few drops of food coloring to each bowl and mix until well combined.
  6. Spoon a small amount of each colored batter into the prepared cake pans, creating a rainbow effect.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
  9. Once the cakes are completely cool, stack them on top of each other, spreading whipped cream between each layer.
  10. Frost the outside of the cake with whipped cream and garnish with rainbow sprinkles.
  11. Chill in the refrigerator for at least 1 hour before serving.
