Almond Praline Cake with Mascarpone Frosting and Chocolate Bark
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
-
In a medium bowl, whisk together almond flour, all-purpose flour, baking powder, and salt.
-
In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
-
Gradually add the flour mixture to the butter mixture, alternating with the milk. Fold in the chopped almonds.
-
Pour the batter into the prepared cake pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
-
While the cake is baking, prepare the almond praline. In a small saucepan, melt the brown sugar over medium heat. Once melted, stir in the heavy cream and cook for another 2-3 minutes until thickened. Remove from heat and let cool.
-
In a separate bowl, beat the mascarpone cheese and powdered sugar until smooth and creamy.
-
Once the cake has cooled, spread the mascarpone frosting over the top. Drizzle the almond praline over the frosting.
-
To make the chocolate bark, spread melted dark chocolate thinly on a baking sheet lined with parchment paper. Let it cool and harden, then break into pieces.
-
Decorate the cake with the chocolate bark pieces. Serve and enjoy!
