Roll out the pie crust and press it into a 9-inch pie dish.

Slice the tomatoes and place them on a paper towel to remove excess moisture.

In a bowl, mix together mayonnaise, Dijon mustard, salt, and black pepper.

Spread the mayonnaise mixture onto the pie crust.

Layer the sliced tomatoes on top of the mayonnaise mixture.
