Phoney crab cakes are a popular vegan alternative to traditional crab cakes, made using jackfruit as a substitute for crab meat.

Drain and rinse the jackfruit, then shred it using a fork.

In a mixing bowl, combine the shredded jackfruit, Old Bay seasoning, red bell pepper, green onions, vegan mayonnaise, Dijon mustard, lemon juice, panko breadcrumbs, fresh parsley, salt, and black pepper. Mix well.

Form the mixture into patties and place them on a baking sheet lined with parchment paper.

Heat vegetable oil in a skillet over medium heat. Fry the patties for 3-4 minutes on each side until golden brown.
