Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate large bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, then stir in the milk and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Make a small well in the center of each muffin and fill with a spoonful of apricot jam.

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
