In a mixing bowl, combine the grated cheddar cheese, gouda cheese, cream cheese, eggs, milk, sautéed onion and garlic, salt, black pepper, paprika, and fresh parsley. Mix well.

Roll out the pie crust and press it into a pie dish. Pour the cheese mixture into the pie crust.

Bake in the preheated oven for 45 minutes, or until the top is golden brown and the filling is set.
