Peppermint Fudge Cake
Peppermint has been used for centuries to aid digestion and freshen breath.

Preheat the oven to 180°C (350°F).

Melt the dark chocolate and butter together in a heatproof bowl over simmering water.

In a separate bowl, whisk together the sugar and eggs until well combined.

Gradually add the melted chocolate mixture to the egg mixture, stirring constantly.

Sift in the flour and cocoa powder, and mix until just combined.

Stir in the peppermint extract.

Pour the batter into a greased and lined cake tin.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Once cooled, spread whipped cream over the top of the cake and sprinkle with crushed peppermint candies.
